Pumpkin & Pork Bone Soup

Ingredients

450g Pumpkin (南瓜), 4 Large Tomatoes (番茄), 1 Large Onion (洋葱), 100g Celery (西芹), 65g Peanut (花生), 6 Candied Dates (蜜枣), 1/4 Dried Tangerine Peel (陈皮), 600g Pork Bone (猪骨), 2,000 ml Water

  1. Wash and parboil pork bone in boiling water and drain.
  2. Peel, wash and cut pumpkin, tomatoes, celery and onion into large pieces.
  3. Soak dried tangerine peel in water until tender. Scrape off white pith.
  4. Put tangerine peel in water and bring to boil.
  5. Put all ingredients into hot water and bring to boil over high heat. Adjust to low heat and simmer for 1 hour.
  6. Turn heat off and add 1/2 tsp salt. Serve.
